Wine making and refining
Sangiovese „Chiara“ comes from a carefully selected grapes from the best vineyard of our farm in Fauglia, in the sweet Pisan hills. Manually harvested in boxes and vinified in stainless steel tuns together with the skins for 15 up to 25 days. When the Fermentation is completed the wine is pumped in 225 litres french barriques to polish the sangiovese tannins and enhance the persistance. Organic principles and careful selection of grapes together with the small quantities of grapes produced create a very interesting wine, rich in perfumes, smoothness and persistance. Chiara is best served between 18-20 C°. No oenological practice is applied and it is not filtered nor clarified.
Chiara displays a ruby-red color with garnet-red reflexes. Excellent expression and aromatic complexity: the bouquet wanders from sour cherry to cherries and violets with hints of licorice, cinnamon and chocolate. The palate is balanced and supple with velvety tannins and extremely long persistance.
