Winemaking and refining
The merlot Gaia comes from a very small vineyard in Fauglia, in the sweet pisan hills. Manually harvested in 15 kg boxes, vinified in small stainless steel tuns and macerated on the skins for 15 days. Alcoholic fermentation is controlled according to the grapes ripening for best perfumes, tannines and color. At the end of the fermentation the wine is transferred in 225 litres French barriques. No oenological practice is applied and it is not filtered nor clarified.
Gaia Shows an intense color, perfumes of cherries and blueberries together with candied fruit and sweet spices notes. On the palate the wine is balanced, supple and long.
